Restaurateurs are increasingly using online surveys to influence menu construction, reports the Herald. At the Dockside in Wakefield, co-owner Lisa Urbaczewski recently added a slew of lower-calorie entrees to the menu after customers indicated online that they wanted healthier options. The increase in online survey usage coincides with the rise of Twitter, where restaurants like Myers + Chang regularly solicit customer opinions. Just call it the rise of the user-generated restaurant.
