Friendly’s Express, a faster version of the chain restaurant, will open a Brookline location soon, according to a hiring post on Craigslist. Friendly’s Express might best be described as semi-fast food: customers order from a limited menu at a counter, but their food comes to a table via server. The first Friendly’s Express opened in Mansfield in August, and VP Jim Sullivan says he plans to open 300 more outlets in the next five years. After the death of Brigham’s, it’s nice to know one Massachusetts-based purveyor of ice cream and sandwiches is holding down the fort.
