Why Cutty’s Will Be Brick and Mortar

Despite the fact that Cambridge is theoretically the most street-food-friendly town in the Boston area, Charles Kelsey, owner of the forthcoming Brookline Village sandwich-centric shop Cutty’s didn’t have an easy go of it with his original idea for a Cambridge truck. “I had so much support from nearby businesses, but the bureaucracy is tough. I felt as if I was trying to open a gun store in Cambridge,” he tells the Globe. He’s keeping the original Cutty’s, now slated for a January opening, sedentary, but he hasn’t given up his plans for an eventual food truck. Watch out, Clover!
