BFFs Jasper White and Lydia Shire Team Up at Towne

Well, this is big: Jasper White and Lydia Shire are designing the menu for Towne, the Patrick Lyons-owned Hynes Convention Center restaurant we told you about a year ago. Though Shire and White are overseeing Towne, the day-to-day operations will be run by executive chef Mario Capone, who’s worked with Shire since her Biba days and currently helms the kitchen at Scampo, reports the Globe. Towne, which will have indoor seating for 300 and an 80 seat patio, marks the first collaboration for Shire and White since the two chefs worked together at Seasons in 1982.

The two chefs are “literally best friends,” as Shire puts it, and their early plans for Towne’s menu seem to be based largely on foods they’ve cooked for each other: a mustard-brushed bacon from Shire, a sherry-heavy Bermuda clam chowder by White. There will be steak, pasta, Peking chicken, and a fifteen-course lobster tasting menu. “It sounds like it’s all over the place,” says spokesperson Jo Swani, “but because it’s Lydia and Jasper, it will all come together.” Towne is set to open in June.
