Former FDA Commissioner Dr. David Kessler has some surprising insights into why we love to stuff our faces, per the Globe. His book, The End of Overeating—get it now in paperback—analyzes the sinister reasons behind the American obesity trend. According to Kessler, we’re suckers for sugars, salt, and fat. And (surprise, surprise!), the food industry caters to these naughty needs.

According to Kessler, it’s tempting to chow down on highly processed foods because they’re so darn easy to eat. The average bite of food 30 years ago involved plenty of chewing. With today’s snack-y treats, from chips to french fries, it’s easy to bite, chew, gulp, and move on. Kessler also cautions against using exercise as a sole combatant against fatty foods. After all, he says, a 300-calorie candy bar can be downed in two minutes. Working it off takes about an hour. Gulp.
