New Food Truck Lets You Eat Like A Chef

Two restaurant industry veterans are poised to open a food truck, aptly named Staff Meal, any day now. The truck will be located on Centre Street in Jamaica Plain, though ultimately owners Adam Gendreau and Patrick Gilmartin hope to take it mobile. The menu? Meat-focused. The hours? Late (open ‘til 3 a.m., to be exact). The debut burger? Pickled veal tongue and bacon mayo. Yes, it’s all true.

The duo first met whilst cooking at Rialto many years ago; they later went on to spots like Circle and Bistro du Midi. According to Gendreau, their menu highlights items that they enjoyed cooking for colleagues over the years; timid diners need not apply. Expect artery-clogging goodies like oxtail sandwiches, reuben spring rolls, and chicken liver lasagna. Their burger, meanwhile, is culled from a signature blend of beef tongue, hangar steak, and short rib. Oh, and one more thing. Gendreau (a former butcher) says to expect “a lot of fried stuff.”
