Cochon 555: 5 Chefs, 5 Pigs, 5 Winemakers happens to be one of our favorite pig-cooking competitions. The national pork-off descends upon Boston’s Fairmont Copley on January 30. Featured chefs include Mary Dumont of Harvest, Will Gilson of Garden at the Cellar, Matt Jennings of Farmstead (that’s in Providence, but we’ll forgive him), Barry Maiden of Hungry Mother, and Lydia Shire of Locke-Ober and Scampo. For $125, you can eat pig of every persuasion and vote for the “Prince or Princess of Porc.” The winning chefs will compete against other winners at the finale Grand Cochon at Aspen’s Food & Wine Classic.
