Here’s One Pop-Up We’re Just Dye-ing to Attend

Remember when we told you that Garden at the Cellar’s Will Gilson was contemplating hosting a pop-up at a hair salon? Hope you didn’t brush us off, because it’s really happening! More details, plus the menu, ahead.

The follicular feast happens on April 9 at chi-chi Mizu Salon in the Back Bay. It’s a fitting spot, as Eat pop-up series’ co-founder Aaron Cohen reminds us that Mizu is Japanese for water, and a portion of the proceeds from the $100 dinner go to the International Medical Corps for their work in Japan.

Gilson and pal Louis DiBiccari of Sel de la Terre have teamed up to concoct the following menu:

First Course

Grilled leek panna cotta with grilled asparagus, morels, and shaved Parmesan

Second Course
English Pea soup with pickled mushrooms, and country ham “suds”

Third Course
Angel Hair fideos with rock shrimp, Meyer lemon, chickpeas, and spring greens

Main Course
Salt and Pepper grass-fed beef with bok choy, curried potatoes, and ginger treatment

Dessert
Blonde brownie with caramel mousse, Madeira gel, and cherries

It’s been too long since we lathered our brittle mane with country ham suds! (Surely the ginger treatment will wash away any lingering hammy aroma.) Learn more and buy tickets here. Don’t even think about scalping.
