Aqua-mopped chef Jason Santos has announced the name of his new restaurant—decided through a contest in which fans came up with creative potential monikers. More straight ahead.

The Herald reports that Santos waded through more than 500 nominations and ultimately settled upon “Blue Inc.,” suggested by Somerville’s Ashley Capone. She’s no stranger to the restaurant biz: Her family runs Capone Foods.

Capone chose the name because “I know he has blue hair and likes blue, and I’d heard he has a tattoo.” Fair enough. We definitely think it’s far better than some of the other suggestions Santos received. (“Elemental”? “Bluejay”?)

“This was the hardest thing I’ve ever done. It’s like a weight has been lifted off me and now I can go on,” Santos was quoted as saying. For a guy who emerged unscathed after dealing with Gordon Ramsay on Hell’s Kitchen, that’s saying something.

Hopefully he can relax for a little bit: He left his post at Gargoyles in a blaze of glory on Saturday night and plans to open Blue Inc. in June.
