The Boston Business Journal nicely traces the ascendance of Grillo’s Pickles, the picklery that’s succeeded against all odds in a difficult economy. As we told you awhile back, they’ll open a brick-and-mortar shop in Inman Square in the coming weeks. Until now, the popular pickles were only available at supermarkets, carts, and on a stick at Fenway.
The pickle purveyor plans to move around, starting first in Inman Square near All Star Sandwich Bar, leasing a small space for 90 days, then moving to other “empty storefronts” overseen by pickle-friendly landlords. We can only assume that they’ll eventually seek to settle down someplace permanent. Expect “obscure varieties including half-sours with lemon zest, carrots with dill, pearl onions, red seedless grapes with mint, red and golden beets, and asparagus.” Travis Grillo, the mastermind behind the pickle operation, naturally hopes to break even. But mainly, he just wants to share his pickle passion with the world. “I may lose money, but it’s all about doing something no one has ever done,” he tells the paper.
