Brian Poe Sells Out of Yak in Three Hours; Eyes South End for New Restaurant, Estelle’s

Brian Poe opened his yak-and-emu-fueled Tip Tap Room on Beacon Hill last night and lived to tell the tale: He tells Grub Street that he sold out of yak in three hours, despite being a bit worried about how it would go over. “We moved through the elk right after that, then potatoes stuffed with seven types of bacon,” he says. He’s not pausing to revel in his meaty triumph for long, though: Next up is Estelle’s, which he hopes to open in the South End in three or four months.

Originally dubbed Poe’s Chester Square Pub, Estelle’s will open at the corner of Mass Ave and Tremont Street. Business partner Gordon Wilcox suggested the new name to pay homage to a bar in Dorchester, his old neighborhood. “We’re trying to bring back a nice comfortable area for everyone to enjoy and not worry, to really clean up that corner,” Poe tells us.

Meanwhile, back in swanky Beacon Hill, Poe says to sidle up to his counter and ask what wild game he has that day. Right now he’s all about antelope with truffled leeks and yak (“it takes on a really great charred flavor”) and he’ll happily rip you off a piece to sample, in case you’re feeling timid. “I have zero limits,” he says. Mr. Poe: You, sir, have got game.
