The Sea By Alexander’s Steakhouse Opening in Palo Alto

The name is a mouthful, and not in a good way, but nonetheless The Sea by Alexander’s Steakhouse is having its grand opening tomorrow down in Palo Alto. The Alexander’s team took over and remodeled the former Trader Vic’s at Dinah’s Garden Hotel (4269 El Camino Real), as we reported earlier, and the idea is high-end, luxury seafood dishes, along the lines of Providence in L.A. or Le Bernardin in New York. To that end, they’ve hired a chef from Providence, Yu Min Lin, who was born in Taiwan and trained in Japan, and who replaces recently ousted executive chef Jeffrey Stout.

There’s an international wine list, with seventeen by-the-glass options to start, and a cocktail program being overseen by bar manager Perry Hewitt.

Menu items from Chef Lin that have been teased out to us include hamachi shots with truffled ponzu, avocado, ginger and jalapeño; wild Alaskan poached halibut with fresh peas, Meyer lemon, shimeji mushrooms, carrots, dried bell peppers and smoked salt; wild Hawaiian seared mero with sweet potato, sautéed broccolini, cippolini onions and port wine; wild Canadian butter poached lobster with kabocha squash, heirloom beets, spinach and horseradish. Entrées will range in price from $31 to $65, so this won’t be a cheap date place. And starting in about a month, Chef Lin will be offering an eight-course tasting menu priced at $140, without beverages.
